Everyone loves dessert… This girl included! When it comes down to Thanksgiving dinner and I’m tempted with pies, cookies and other yummy desserts, it’s really hard for me to resist. Therefore, I always bring my own dessert (along with a fruit & veggie tray; yep! I’m that relative!). This year, I wanted to try something with pumpkin. I came across this recipe for Pumpkin Protein Bars and I knew that I had to try them! Pumpkin + Chocolate Chips, twist my arm, I’ll eat them!
I used a vanilla protein powder that I bought from my Monavie representative in Williston. If you want a good quality protein powder then I suggest using Monavie. These turned out even better than I had imagined! Mine puffed up and turned almost cake-like. They are very filling so I suggest eating only one at a time. Plus, they are guilt-free. Next time, I think I’ll try them as individual cookies rather than baking in a 9×13 pan. If you try that, let me know how it goes!

1 cup pumpkin puree
1/2 cup almond butter
4 ounces vanilla plant-based protein powder
1/2 cup maple syrup
1 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
1 cup rolled oats
2 tablespoons chocolate chips
- Preheat oven to 350°F. Spray a 9-by-11-inch pan with cooking spray.
- In a medium-sized bowl, use an electric mixer to combine pumpkin puree, almond butter, protein powder, maple syrup, and vanilla. Beat in the eggs.
- Stir in the flour, baking soda, and spices until a smooth batter forms. Stir in the rolled oats.
- Spread batter evenly into prepared pan. Sprinkle with chocolate chips.
- Bake for 12 to 15 minutes or until a toothpick inserted comes out clean.
